Social Media Monday

This week I checked out my Facebook, Twitter and Instagram postings. I found a Sesame Street quiz to see what character you are and I was happy, loveable Grover, a local crime tracker which was interesting and scary at the same time, pictures of Morgan and some quotes re-tweeted. Snow

I looked at my social media (Facebook, Twitter, etc) to see what I have recently posted that I could discuss here on Social Media Monday. The last three or four posts were about the snow. We keep getting more snow. Just when it looks like it will melt and the roads will be clear, the snow moves back in. We have gotten quite a bit of snow and shoveling seems to be the only outdoor exercise I am getting. I'm ready for a melt and a run! Wednesday-Friday are supposed to be in the 30 degree range-wow, never thought I'd be so delighted to see freezing level temps! :) Fingers crossed that I get to get out and run these next few days. Also, not just the snow that makes it tough: we have a lot of places near us that are just sheets of ice. That will only make for injuries. I did get to the local mall and walk at a brisk pace for two hours which is great! :)

Social Media Monday-Resolutions

On one of my social media spots I saw a link for this post by Aby at Simplify 101. It was called "Lessons Learned from Setting 13 Goals in One Year". I enjoyed her look-back at her goals and what she achieved. And, while I visited some of these during my One Little Word post from yesterday, I am setting 14 goals, here, now, as well. :) It is 2014, after all. :)


  1. Run 900 miles-this was my goal the past two years and last year I finally came close. 
  2. Fall half marathon under 1:45:00 
  3. No new running injuries and healing the old... Fingers crossed for that, please!
  4. Read 24 books-I finished one that I will tell you about on Wednesday and am in the midst of the second-this cold, pending snow weather helps! :)
  5. Reach my goal weight. Over the last three years I have gotten down close about July and then worked my way back up to the same weight I have started at by December. I want to reach my goal weight and stay there all year! :) {see "eat light" from yesterday}
  6. Make 1 craft from Pinterest per month-I always pin things I want to make or try and then never do anything with them. If I can't accomplish this goal, then my craft board from Pinterest will require some re-thinking in December.
  7. Make 1 recipe from Pinterest per week-I enjoy my weekly installment of "Recipes I've tried this week" here on the blog and I enjoy trying new recipes, so this is a set goal.
  8. Finish my 2013 Project Life-I did really well until July, then I didn't put any other pictures in... so hoping to finish it. I am not tackling it again this year; I always get disappointed when I don't get it done. 
  9. Mini albums or online albums. I have a few sites I'd like to try, and I think it would be fun to do a small, online or paper, album for each month's pictures for the year. Just a thought in the works...
  10. Finish a rag quilt-I actually have one I started with my mom a couple years ago. It got placed into a colored tub with a lid and I found it over the summer. I tackled it a few months ago and my sewing machine stopped working. I tried my daughter's and it quit, too. So, we had both repaired and the moment of truth is around the corner-will they work? Will I get it finished?? :) Hopefully-I'm thinking it would be nice to snuggle under as the temps dip below 0! {"lighten expectations" from yesterday's post}
  11. Send 1 card or note-not email-per week. Just one-in 7 days, 168 hours, actually, I should be able to find time to let people know I care! I did one on Saturday this past weekend, so one this week is done! :) {"leave the light on" from yesterday}
  12. Daily Devotionals-I got into a good habit of reading my devotional and Bible at the end of last year and I'd like to keep it going. {see "find my light" from yesterday}
  13. Clean/organize one room or full item of furniture per month {"lighten the load" from previous post}
  14. This is an open goal. It is something I want to leave unknown and revisit later. It might be writing a book, entering a new profession, taking a sewing or knitting class, taking a college class, mentoring or volunteering, skiing... I don't know. I learned in 2013 that a year is a long time and anything can happen. I never thought I'd change my goals and dreams away from teaching but I did. I never thought I'd be content just... waiting... but I am. I am praying on it and I hope God will guide me.

Social Media Monday

I got off track again the last few weeks. Been very busy. However, back on schedule for today... :)
Social Media for today is from my Instagram, Twitter and Facebook. I posted it to all three.
My sweet dogs-so glad Merlin is on the mend. Was pretty worried while stayed overnight at the vet. #dogs
Merlin had a spell Thursday. He couldn't stand and had some other odd symptoms, like leaning his head to one side. My youngest daughter and I were very worried, and my husband was on his way back from a business trip, not to arrive for two more hours. My father in law came to help me get him into the car, because his 83 lbs was a bit too much to do on my own. I was so thankful my in laws had made it back earlier in the day from their month long trip. Merlin couldn't get up on his own-not even half of himself, so I was worried it was his time. I called the vet and they said to bring him in. We got Merlin to the vet and he stayed overnight. They said it could be anything from an ear infection to a brain tumor! He ended up having an inner ear infection, way deep in his ear, causing dizziness so he couldn't get up. It also caused him to be ill a few times before we headed to the vet, too. After fluids and meds, he is very happy to be home. He still seems a little sleepy but doing much better! The vet said he doesn't seem to be near his "time", yet, even though he is 13-91 in dog years! And for that I am very thankful. :)

Social Media Monday

My husband, my youngest daughter and I all ran in our local high school's 5K run fundraiser this weekend. My husband and I were "just going to run for fun" but as the start approached I let on that I wanted to work at my PR (my personal record for this stage in my life... in college my fastest 5K/3.1 miles was 19:35. I haven't gotten anywhere close to that, but as I heal and get back into shape again, I get faster) which was 22:55. He pulled me along-even though he definitely could have taken off, left me and sprinted to his PR-and I finished in 21:53. I am sure the course was about .04 miles short, but I was happy with the work I put in. It was a good day! My post for the day:
Fun 5k, good finish time, 2nd place in my age group. Love running w husband & daughter & missed our other daughter. Raked some leaves, now watching my team's 2 games, one football and one basketball. Thankful for it all. #30daysofthankful

Last week I had a lovely car ride with our high school daughter. We got to chatting about something silly, giggling and laughing. So much fun when you can share those moments, especially knowing they are few and far between as they age. I've also been working on #30daysofthankful posts, too. So, my Facebook post was:

Last November, I read about Cathy Zielske's 30 Days of Thankful, and I am trying to remember to do this each year, as well. I just tweet when I think of it: #30DaysofThankful. Social Media Monday and Recipes I Have Tried

Yesterday I posted on Twitter and on Facebook a wonderful recipe I tried yesterday morning: Cranberry Orange Muffins. I was in the mood for them, and in the past I have made them from a mix. In an effort to eliminate some of the unnecessary ingredients from our diets, I decided to make them on my own. I love baking when the weather is cooler, anyway, so this was a good excuse. :) They turned out quite delicious and were pretty easy! I also tried a seafood jambalaya recipe last week, that I have listed here as well. I left out the andouille sausage, for our vegetarian daughter, and didn't get the shrimp with the shells, just used frozen and the ice/liquid they thawed in into my soup. Two nice warm cooler foods! Cranberry Orange Muffins

Ingredients

  • 1 cup dried cranberries
  • 1/4 cup fresh orange juice
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 1/2 cup unsalted butter, softened, plus more for preparing the muffin tin
  • 1 teaspoon grated orange zest
  • 2/3 cup granulated sugar, plus up to 1 tablespoon for topping the muffins, if desired
  • 2 large eggs, at room temperature
  • 1/2 cup milk

Directions

Preheat the oven to 375 degrees F. Put the cranberries and orange juice in a small saucepan, and bring just to a simmer over medium heat. Remove berries from the heat, and set aside to cool and plump. Drain off any excess liquid and set aside. Lightly brush a 12-muffin tin with butter. Sift the flour, baking powder, and salt into a medium bowl and set aside. In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, orange zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer. Fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the cranberries. Do not over mix. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.
Ingredients
2 pounds medium gulf shrimp, peeled and deveined, shells reserved
Extra-virgin olive oil
1 pound andouille sausage, cut into rounds
2 green peppers, seeded and cut into 1/4-inch dice
3 ribs celery, cut into 1/4-inch dice
1 Spanish onion, cut into 1/4-inch dice
Kosher salt
Pinch crushed red pepper
3 cloves garlic, smashed and finely chopped
1 (28-ounce) can diced tomatoes
1 teaspoon cayenne pepper
2 cups long-grain rice
2 fresh bay leaves
1 bundle fresh thyme
5 scallions, whites and greens thinly sliced, for garnish
Directions
For the shrimp stock: toss the shrimp shells in a large pot and fill with water. Bring the water to a boil, turn off the heat and let sit for at least 15 to 20 minutes, although longer is fine. Strain the shells and discard.

Coat a large, wide pot with olive oil and bring to medium-high heat. Add the andouille and cook for 4 to 5 minutes, or until the sausage starts to brown. Add the peppers, celery, and onion to the pan, season with salt and a pinch crushed red pepper. Cook 7 to 8 minutes or until the mixture has softened and is very aromatic. Toss in the garlic and cook for 2 to 3 more minutes. Add the tomatoes and cayenne. Stir in the rice.

Add 4 cups shrimp stock, bay leaves, and thyme bundle. Season with salt and taste it to make sure you are on the way to something delicious. Cover and cook over medium heat for 25 minutes.

Stir in the shrimp and cook for another 5 to 7 minutes or until the shrimp turn pink. Serve garnished with chopped scallions.

Social Media Monday

My Facebook post from Sunday after our long-awaited half marathon:
We all three had a great race at the Nationwide Children's Half Marathon! Husband and I PR'd (he did awesome-1:33:59 and I PR'd by two minutes - 1:45:05!) and Oldest Daughter completed her first in 1:48!! So proud! And tired! 


It was a long day, but we all accomplished it and I was extremely pleased that my injury didn't show itself until over halfway. Saturday night I told my husband that I was still shooting for my 1:45 goal. He looked at me like I was crazy due to this injury issue. I told him I had to think like I could make my goal in order to get there. 

We went down to the race, in increased security due to Boston, and waited for over 30 minutes in the very cold, and dark with 19, 000 others. I realized with about 15 minutes that I needed one more bathroom stop, but the lines were still long and there wasn't really time. So we started and then there were porta-potties at mile 2. I ran in to use them! And I still made my goal time! :))

I look forward to a run that is pain free-well, injury free, a half marathon probably won't be pain free, hm? :) But I was so proud of my husband and daughter and so happy to be able to do it with them. Now, onto recovering so I can get there again! :)

Social Media Monday on Tuesday

We had a very busy weekend! So, today I will catch up from our busy weekend, to talking about family and Social Media. :) Our oldest daughter wasn't going to come home this past weekend. It was her fall break (no classes Fri.-Sun.) However, all her activities and observations for Friday were canceled. She had plans with another girl who was staying on campus, but our girl was homesick because her younger sister's family birthday get together was Sunday morning. We've always all been together for birthday celebrations, so this was a bummer of a milestone-I do understand that will soon be the norm, not the exception. However, my in-laws said they'd drive 2.5 hours to get her and surprise our younger daughter. They didn't get back until 11pm and our oldest couldn't wait so she went in and woke our youngest. Our youngest has no recollection of this and slept-talked through it. In the morning, as our youngest was getting ready for her cross country meet, I told her to be careful not to be too loud. She asked why and I said because Sis was still sleeping. She ran in and crawled into bed with older sis, not knowing she had come in the night. :) It was a sweet sight to see. It will be nice to see our oldest again so soon when she comes back this weekend for the half-marathon the three of us are running in.
On Sunday we made a breakfast/brunch with some new recipes (which I will share on Friday!) And spent time celebrating our youngest, being together and then we all four headed to take our oldest back to school. We stopped at a local on-campus favorite restaurant for lunch and enjoyed just a little more time together.
Our oldest has started to think about transferring colleges for next year. Her roommate now, whom she adores, will be rooming in another dorm so she will have to find another or "wing it". Plus, she is a family girl, a homebody and I think she would like to transfer closer. However, she likes it where she is... So, another adventure. We told her she at least has a one year commitment, but she does need to be looking ahead to find the transfer information in advance.

I went back through my Twitter and Facebook posts for my Social Media Monday post and found that I tweeted/re-tweeted several quotes (see below), a link to Runner's World where they discuss running the muscle issue I have (piriformis), and this: 10 Apps to Relax Your Body and Mind from PBS. I haven't gotten any but some sounded interesting. (Some sounded silly, but who am I to judge. ;))

Social Media Monday

I posted on Facebook this link about a large number of bees found dead. The article was connecting the bee deaths with pesticide (which isn't really surprising, is it?) and with an already declining bee population, it made me sad. I wondered what I could do. My initial reaction was to call a local organic lawn company, so I'm not hiring someone to care for our lawn that is just bringing harmful chemicals. Still researching, but might have one I like. I don't spray my apple trees, either. My apples are eaten by bugs each year and we don't get any of their harvest, but we have several bees who come and pollinate. I also noticed, when I went to trim off the growth of my basil plants, that they were full of bees before I could trim the flowers off them. Hoping to help them in my yard, at least. We need them!
